A flavourful insight into the Sailana Royal Culinary Art
The Surajgarh Fort affords its guests a unique chance to sample royal dishes prepared by HRH Vikram Singh of Sailana. The Sailana kingdom’s fascination with good food stretches back for three generations when HH Vikram Singhji’s grandfather, HH Sir Dilip Singhji, taught himself how to cook —maharaja-style. Sailana sat at the crossroads of Madhya Pradesh and Rajasthan, and hence Sir Dilip Singhji developed a fascination with the cuisine of other royal houses as well and imparted this influence to the now classic recipes.
If you’re a maharaja, you cook in much the fashion of a top professional chef. The actual preparation is carried out by the kitchen staff; a suitable balcony or verandah is located, and sigris, rugs, vessels, spices and key ingredients are brought out in procession while HH waits in royal splendour to conjure up the dishes. There are no gimmicks served alongside HH of Sailana’s delicacies: just excellent food and recipes you won’t get anywhere else. And if you find yourself in Surajgarh when the HH is not in residence, the other resident master chefs will be happy to serve up some of the same Sailana classics for you.
Attractions & Nearby Places of Interest
A. In Surajgarh
1. Painted Havelis - Shekhawati is popularly known as an open air art gallery and Surajgarh is at the heart of it and boasts of many havelis (private mansions). Walking and camel cart tours are organized to the havelis. The Marwari traders accumulated enormous wealth in their trade of rice, opium, cotton, spices and textiles. The wealth was usually re-invested or sent back home for their families. The affluent Marwari families tried to outdo the other in the size and quality of their mansions, giving birth to fine and colourful architecture in the desert region where it was least expected. Lime plaster formed the fine layer on the walls where the painting was done. While the plaster was damp, outline and filling of colour was added…bonding it for time immemorial.
2. Camel Cart Rides – You could enjoy the countryside sitting on top of the camel or from a cart. Picnics are organized to the local Bawari (water tank). Many species of birds are sighted on the way. Barbeques and bonfires are also organized in the countryside around the Bawari.
3. Shopping – Surajgarh is famed for Laak bangles and souvenirs; they are made at small shops in front of guests in the colours and designs preferred. Traditional silver ware and puppets are also available for souvenirs.
B. Around Surajgarh
1. Khetri Fort (45 km.) - Khetri Fort is an ideal day picnic from Surajgarh. Khetri fort is perched on top of a hill and can be reached only by jeeps available at the Khetri Village below. The Fort is protected by a Hercules rampart all around; the Maharaja and Maharani Fort are situated at 2 different corners of the hill - in between are ruins and abandoned houses. These houses belonged to the villagers below and during war times they shifted inside the fortified fort after abandoning the farming below.
2. Havelis at Kajra (5 km.) – Kajra is famous for Havelis of the 19th century, unlike Surajgarh which boasts of 18th century havelis. Though there are few 18th century Havelis here, the village reflects Art-Deco period perfectly. The change in the society is evident from the frescos and architecture here and this serves as a lovely example of how society and development changed from the 18th to the 19th century.
